Hummus
WHAT YOU WILL NEED:
- 14 oz can of chickpeas, drained and rinsed
- 2 cloves garlic, finely chopped
- juice from 1 lemon
- 2 tablespoons tahini
- 3 tablespoons extra virgin olive oil
- a pinch of paprika
HOW TO PREPARE:
- The chickpeas, garlic, lemon juice, tahini and olive oil are blended until very smooth.

- salt and pepper to taste

- Avocados are mashed with lime juice until smooth.
- The onion, tomatoes, chili and cilantro are folded in.
- Salt and pepper are added until the balance is right.

Salsa
WHAT YOU WILL NEED:
- 6 tomatoes, chopped
- 1/2 onion, chopped
- 1 garlic clove, finely chopped
- juice of 1/2 lime
- 1 green chili, deseeded and finely chopped
- 2 tablespoons olive oil
- 2 tablespoons cilantro, chopped
- salt and pepper to taste
HOW TO PREPARE:
- All ingredients are mixed in a bowl until evenly combined.
- Salt and pepper are used to finish the flavors.
- A short rest helps meld the flavors before serving with nachos or fresh vegetables.
